Summer Recipe: Beet Salad

Whenever possible, I try to consume only whole foods and use local ingredients. This beet salad recipe is no exception. It is only a few ingredients and you can increase or decrease the amounts to transform it from a side dish to the main meal!


Ingredients: 
4 whole beets, sliced
1 diced apple (I prefer to use a green or gala apple)
3 celery stalks, diced
1/2 small white onion, chopped
handful of chia seeds 

Mix all the ingredients together and you are ready to enjoy a refreshing, filling and healthy summer salad.
